It's Whatever Wednesday and I have the right to post whatever I want, right? I didn't get any stamping done yesterday as I was working on my newsletter but I did manage to wash and package 9 dozen eggs. Chickens are obviously doing quite nicely. Anyone need egg delivery? My refrig is full! Perhaps today I should nag Rob into making up my Fresh Eggs sign for the road! With the glut of eggs, I thought I'd share a quick recipe with you that my kids LOVE. I'm sure it's very low cal....(don't believe everything you read on the web!)
Breakfast
Pizza
1 lb. browned, ground
sausage (Tennesee Pride)
1 c. shredded cheddar
cheese
1 c. shredded mozzarella
cheese
5 eggs
¼ c. milk
2 T. Parmesan cheese
1 pkg. crescent rolls
½ c. browned, crumbled
bacon
Press crescents on pizza pan. Points to the center of the pan. Spoon sausage over crust. Sprinkle cheeses, bacon and diced green onions if you’d like. Pour beaten eggs and milk over top. Bake at 350 for 24 minutes. Add red peppers on top also if desired. (if you are making a token effort at a healthy dish.)
